The monkfish rillettes with candied orange peel are offered in the Algo d'AURE organic range. This recipe was concocted by our cook at the Concarneau canning factory, and is made up mainly of monkfish and pout from fish fillets caught in South Brittany.

Notes of ginger and candied orange peel embellish this original recipe for rillettes de la mer, which can be eaten on toasted bread or rye bread to enjoy all the flavours.
